This creamy coconut lentil stew is rich in flavor, packed with plant-based protein,

1 cup red lentils (rinsed)
1 can coconut milk
2 cloves garlic (minced)
1 small onion (chopped)
1 teaspoon turmeric
½ teaspoon cumin
Salt to taste
Fresh lime juice (to taste)
Chopped cilantro (for garnish)
Prepare the Base
In a medium pot, heat a small amount of oil over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
Add Garlic & Spices
Stir in the minced garlic, turmeric, and cumin. Cook for about 1 minute until fragrant.
Add Lentils & Liquid
Add the rinsed red lentils and coconut milk. Pour in 2 cups of water and stir well to combine.
Simmer
Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 15–20 minutes, or until lentils are soft and creamy.
Season & Finish
Add salt to taste. Stir in fresh lime juice for brightness and balance.
Serve
